I love a good cookie, and Cream Wafer cookies are some of the best cookies I have had. My mom introduced me to Cream Wafers when I was a teen. Since then, they have been requested almost every year. I enjoyed them so much, I had my mom teach me how to make the cookies. Now I make these treats for my family every Christmas. I have taught my own daughter how to make these, and for the past few years, the two of us go to my parent’s house and make them with my mom.
Here is the recipe for Cream Wafer Cookies. We aren’t exactly sure where the recipe came from. The dough is more like pie dough, and they produce a flakey wafer. Since the dough is not sweet, the frosting complements the wafers well. You will need a small round cookie cutter. I have also used a lid from a spice container (cleaned first). They do take some time to make, therefore I recommend making them with loved ones! I also like to double the recipe, because they go fast. The frosting I triple because we like more frosting in between the cookie halves.
Cream Wafer Cookies
Dough:
- 1 c butter
- 1/3 c whip cream
- 2 c flour
- granulated sugar
Filling:
- Blend 1/4 c soft butter
- 3/4 c powdered sugar
- 1 tsp vanilla
- Tint pink and green if desired
Directions:
Mix butter, cream, and flour. Chill for one hour.
Heat oven to 375 degrees. Roll dough about 1/8 inches on a floured board. Cut 1 1/2 inch circles. Transfer to wax paper, heavily sprinkled with sugar, turning to coat both sides. Place on an ungreased baking sheet. Prick in four places with a fork. Bake for 7-9 minutes. Put two cooled cookies together with filling.
